Olivia Newton-John's Oatmeal Cookies - From her Cookbook Titled - Livwise

2 cups rolled oats. I use organic.
1 cup dessicated coconut
150 gms dried fruit of choice. Recipe says chopped dates, or substitute cranberries or Raisins or Apricots etc.
1 cup ricotta cheese. I use low fat variety.
1/4 cup Golden Syrup but I only used a tablespoon which was plenty.
3 free range eggs
1/4 cup cold pressed oil of choice. e.g. Olive oil cold pressed variety
2 large ripe bananas crushed

Preheat oven to 180 Degrees Celsius
Line 2 baking trays with baking paper
Combine oats, coconut and dried fruit in one bowl
In another bowl combine ricotta, golden syrup, eggs, oil and bananas and combine well.
Combine dry ingredients and wet ingredients and stir till it holds together. Adjust with a little water if too dry or a little oats if too wet.
The mixture is supposed to be fairly wet though but hold together.
Drop large tablespoons full onto the prepared trays. Push the top of the cookies down at the top to flatten them slightly.
Bake for about 20 mins or until cooked through. Allow to cool on tray for 10 mins before transferring to a cake rack to cool.
The cookies once cooled can be stored in and airtight container for 10 days. If they last that long LOL
Enjoy.

These are the best cookies and they are so healthy too.
