They also freeze well, raw or cooked.

Thanks Tarnz, this is a great recipe using cottage cheese to boost protein levels, instead of the usual potato.

This recipe is from Tarnz's diary, I have just twigged it a bit.............

Salmon Patties

125 gms low fat cottage cheese
1 large tin salmon
1 onion, chopped
1 egg
1 teaspoon vegetable stock powder
2/3 cup wholegrain breadcrumbs
1/2 teaspoon dill
salt and black pepper to taste

Add onion and about tablespoon water to microwave dish, and zap for 4 minutes on high.

Combine all ingredients.

Shape into 8 patties, roll lightly in extra breadcrumbs.
Cook until browned.

I freeze the leftovers.
