Thought I would share this recipe here for those that may not see it in the December topic.
These patties are great for the Opti pre-surgery phase as they are made totally from allowable vegies....they are also super yummy!

Curried Vegie Patties

Ingredients:
1/2 Cup Finely Diced Capsicum
1 Grated Carrot
1 1/2 - 2 Cups Finely Diced Cabbage
1 Finely dDced Onion
1 Grated Zucchini
2 Finely Diced Mushrooms (I left these out)
1 Batch of Cauliflower Mash (just chop up cauli, cook in a little water til tender, drain well & mash or puree)
1 Tablespoon Curry Powder - approx. (or to taste)
Salt, Pepper, & any Herbs or Garlic Powder you like

Method:
Prepare your cauliflower mash (sometimes known as "Notatoes").
Stir fry all vegies except cauliflower in a sprayed pan until tender & the moisture is gone (you may need a little water to get them started).
Mix together vegies, cauliflower mash, salt, pepper, herbs & curry powder.
Spray two trays with cooking spray, then use an egg ring to form patties pushing mixture in firmly, then carefully lift egg ring & repeat.
Cook in oven at 200' for 40 - 60 mins.  I turn mine halfway.
Makes approx. 20.
Enjoy!

They reheat ok, just go a little bit soggy but still yummy.
