I have created a couple of really nice mushy recipes that go down well.....if you like fish.
Smoked Cod with White SauceBoil a fillet of smoked cod (south aftrican fillet) then skin, debone and flake into very small pieces.
In a saucepan, saute half a finely diced onion in pro-active margarine or xtra virgin olive oil. Add 2 tspns corn flour, then enough lite/skim milk to make a fairly runny consistencey. I used about 1 and a half cups. Season with salt & lots of pepper to taste. Add flaked fish.
Salmon in Creamy Cheese SauceSaute small salmon fillet in xtra virgin olive oil...then flake in very small pieces.
In a saucepan, saute half a finely diced onion in pro-active margarine or xtra virgin olive oil. Add 1 and a half tspns of garlic from a jar then about 2 tspns dried dill. Into this add one tub of the philadelphia cream cheese for cooking 60% fat free. Simmer for a minute then add the flaked salmon and season to taste.
These a really tastey and make about 4 portions each of what I can handle. They are good to freeze and take to work for lunch.
