| Another combination could be potato, onion and chorizo sausage. You can microwave the cubed potato, saute the onion in a little water to soften and grill the sliced chorizo to remove the fat. Then combine with egg mix, add herbs as desired and cook as per omelette/frittata. Enjoy Bruna | |

Mix spinach into egg mixture & substitute 1/4 c up grated parmesan for 3/4 cup cubed mozzarella. Sprinkle surface of finished frittata with pinch of oregano
