Cauliflower Curry Soup Empty
PostSubject: Cauliflower Curry Soup   Cauliflower Curry Soup EmptyThu 04 Apr 2013, 12:03 pm

I just invented this soup today as i am on opti. It is nice and filling and could also be used for the post surgery liquid phase as it can pureed down.

Cauliflower Curry Soup

1 brown onion and some garlic (choped and in the pot) sweat down with a couple of spoons of curry powder (to taste) and some tumeric and cumin powder. Throw in a bag of chopped soup vegies (you can get a bag from woolies with chopped carrot, celery etc..) coat all the veg in the cooked off spices and onion and add 4 cups of chicken or veg stock...bring to a boil and throw in half a chopped cauliflower and simmer until vegies are soft. You can then puree it so its thicker or eat it chunky. Its really tasty...like a cauliflower curry soup. Oh and salt and pepper for seasoning.
