| Just wanted y'all to have this recipie...its absolutely fantastic and 1 serving is only 2.5 weight watchers points. If you sprinkle with a tiny bit of cheese you may have to add another point. THis is great for all the family and sits really well in sleeve stomach.
Cream Potato Bake; serves 4. 2.5 points per serving
Vegetable oil 2 tsp onion 1 small, halved lengthways and finely sliced garlic clove 1 crushed. desiree potatoes 5 medium (600g), peeled, cut into 5mm slices (or a bit thinner if you like) Carnation Light & Creamy Evaporated Milk 185ml can skim milk 1/2 cup 125ml vegetable stock powder 1-2tsp of cornflour Low Fat Cheese (optional extra, add more points if added but this is not necessary)
1. Preheat oven to 180c. Use a 10 x 21cm casserole dish. In a small fry pan heat the oil and fry onion until soft and lightly golden. Add garlic and cook for about 30 seconds more. Layer one third of the potatoes in the casserole dish, and spread half the onions over. Arrange half the remaining potatoes over the onion, and season with a salt and pepper. 2. COmbine the milks and stock powder and corn flour and mix extremely well. Pour half the milk mixture over the potatoes and onion. Spread the remaining onions over, and top with the remaining potatoes. Pour the remaining milk mixture over. 3. Cover the dish with the foil and bake for 30 mins, then uncover and cook a further 30 mins, until golden brown. 10 mins before ready you may add a little of the low fat cheese (extra points)
My husband just loved this one and was amazed at how many calories went into this. It is quite saucy so it sits really well in the stomach! Good luck and enjoy! | |
