| Hi, Got this recipe off the web and have made it for me and kids for lunch and it is very easy and lots of protein. 500g chicken mince 3/4 cup breadcrumb 2 egg whites 1 tablesspoon parmesan cheese 1 tablespoon dried oregano Season with salt & pepper Mix all together and make into meatballs 2cm in size. Place on a tray sprayed with oil (I use the olive oil spray) Pop into the oven at 180c for 15 mins turning once. You can make your own tomatoe sauce but I just used a jar of arriabata with extra tin of chopped tomatoes. Put the meatballs in the sauce and simmer for 10 mins. You can serve with pasta or rice or like me just have a few on their own. | |
