| MULLIGATAWNY SOUP - serves 6 at 2.5 WW pts/serve 1 cup washed & drained red lentils 1 large peeled & sliced potato 5 cups chicken stock 1/2 tsp tumeric 1 Tbs olive oil 70 gms raw skinless chicken breast strips 4 clove finely chopped garlic 1 piece finely chopped green ginger additional 1/2 tsp tumeric 1/2 tsp ground cummin 1/4 tsp ground coriander 2-3 Tbs lime or lemon juice salt & pepper to taste
Boil lentils & potato in stock with tumeric. Skim & cook over low heat @ 30 minutes. Blend until smooth Stir fry chicken strips in oil 2-3 mins. - cool then finely chop Add garlic & ginger to oil & cook until golden - add chopped chicken & fry 2 - 3 more mins Add remaining spices Add a little blended lentil & potato mixture to pan & stir til spices are well blended Add everything to main pot of lentil & potato mixture Season with lemon juice, salt & pepper
per serve Kj 799; Protein 12; Carb 17; Fibre 6
I blended this again before having it during my full fluids stage
LENTIL & TOMATO SOUP - serves 4 at 2 WW pts/serve
1Tbs olive oil 2 cloves crushed garlic 1 chopped brown onion 1 tsp ground cummin 1tsp ground coriander 180 gms dry red lentils, rinsed & drained 400 gms diced canned tomatoes 750 mls beef stock
Combine the olive oil with half the garlic. heat over medium heat 7 add onion cook, stirring for 5 minutes. Add remaining garlic & spices, cook stirring for 1 minute. Add lentils, tomatoes & stock Increase heat & bring to boil Reduce heat to low, cover & simmer for @20-30 minutes until lentils are soft, stirring occasionally.
I blended this before I ate it during the fluid stage - very yummy & great when you're getting hungry. | |
