| Hi everyone
This recipe is a fling together one - just fling in everything - I used the slow cooker but you could do stove top also. Just cook the beans after soaking and before adding the other incredients. Oh, and rinse the beans after cooking - gets rid of some of those gas inducing properties.
Here it is
Place 1.5 cups of dried Navy beans (or any whilte bean) in large bowl and cover with water - twice as much water as beans
Leave overnight to soak.
Drain and rinse beans. (if using canned beans just start here after rinsing - but dried beans are cheaper)
In crock pot place some oil to heat (on high) - add 2 red onions (finely chopped) 2 cloves of garlic (finely diced) and half a red capsicum (finely chopped).
Allow to cook until onion is clear - (approx 15 minutes) - colour on the onion, while not required, is good cos it adds to the flavour.
Chuck in the soaked beans
Add one large (approx 800g) can of chopped tomatoes (with added basil or whathever if you prefer)
Add one packet of chicken consomme. (You could make your own jelly type stock if you prefer)
Add approx 1/2 cup of BBQ sauce and 1/4 cup kecap manis or worcestershire sauce if you prefer - Now, I realise these are relaatively high carb foods but I figured that when spread over the whole pot it's not that much.
Add 1/2 - 1 cup of water to allow for further absorption of beans.
When it comes to boiling set on low and leave to very gently simmer for 5-7 hours. Yes, this sounds a lot and the timing really depends on the way the beans cook. You may like them more textured or softer and you can adjust your cooking time to adapt. It may even require longer.
What you could do is soak the beans during the day while you're out or at work, prep at tea time and have the crockpot on overnight while you sleep - that would work well.
I cooked some pork separately and then added beans on top and hey presto a high protein meal - it was lovely.
