Old fashioned creamy lemon or lime pudding

INGREDIENTS
2 large eggs
1 cup sugar
3 tablespoons cornstarch
2 tablespoons plain flour
2 – 4 cups of buttermilk
½ teaspoon grated lemon peel OR lime peel if using lime juice
½ cup lemon fresh lemon juice OR lime juice
¼ cup butter

TO SERVE
1pkt butternut biscuits – crushed
Passionfruit or crushed pineapple to serve

METHOD
In a bowl whisk eggs to blend.
In a saucepan mix sugar, cornstarch and flour. Stir in 2 cups of buttermilk, then set the mixture over medium heat and stir often until simmering, 10 – 12 minutes. Add more buttermilk as required – needs to be consistency of thick custard. I have used up to 4 cups……
Whisk ½ buttermilk mixture into the eggs then return both to pan, along with lemon peel, lemon juice and butter. Whisk over medium-low heat until pudding very thickly coats the spoon, 4 – 5 minutes – DO NOT BOIL
Place pudding through a sieve to get rid of peel and to make smooth and creamy!
Spoon pudding into serving glasses.
If used lemon juice – serve with passionfruit pulp and crushed biscuits on top or
If used lime juice – serve with crushed pineapple and crushed biscuits on top
