Ingredients
* 1 Larger zucchini, sliced into thin circles
* 1 Medium red capsicum, cut into half centremetre wide slices
* 10 Medium mushrooms, quartered
* 20 Cherry Tomato, halved
* 2 Tablespoons of parsley, roughly chopped
* 1 Clove of garlic, crushed
* 1 – 2 Tablespoons of balsamic vinegar
* Cracked pepper
* Salt to taste
* 1 Tablespoon of olive oil
Method
1. Put a medium non-stick fry pan on medium heat, and heat the oil.
2. Add the garlic, zucchini, capsicum, mushrooms, a pinch of salt, combine and toast until golden.
3. Once the vegetables have finished cooking, place them in a large bowl, add the cherry tomatoes, parsley, cracked pepper and balsamic vinegar, and combine well.
4. Serve as a vegetable side salad or a snack between meals.
