I have a lil version of yours apple :) instead of bread I use puff pastry....and throw in whatever I have on hand...great for kids lunchbox too | |

| Mini Man Pies
8 Slices of bread crusts cut off and rolled flat and butter one side 2 rashers of bacon cut up or the same in ham if you prefer, I pre cook my bacon and use vegetarian bacon on occasion. 1/4 onion chopped up fine, I pre cook mine makes it sweeter 8 eggs 1/3 cup cheese
Place the slices of bread into muffin tin 1 per hole butter side down. evenely divide the bacon & onion then crack and egg into each and sprinkle with cheese salt and pepper. Pop into a 180 Ovan for about 10 minutes keep an eye on them until the eggs set. Great hot or cold. You can spray the muffin tins rather than butter the bread and use turkey bacon or vegetarian bacon if you are trying to cut down on fat. You can also leave out the bread altogether tho I break the eggs when doing that. Or again use puff pastry. I have to say they ARE just a rough idea of the amounts I use as I tend to just throw the stuff in and see what looks right.

| Guilt free Mango & Coconut Gelato
This is yummy and has per scoop (47gms); 231 kj 2.3gms protein 0.5 gms fat 0.3gms sat. fat 10.0gms carbs 10.0 gms sugar 27 gms sodium It is as easy as......
1 medium mango peeled and chopped 375 ml can CARNATION light and creamy Coconut flavoured evaporated milk chilled overnight 1/3 cup caster sugar
1. Process mango till smooth 2. Using electric mixer beat chilled cocnut skinny tinny till thick and frothy. 3. Add sugar and beat till dissolved. 4. Add pureed mango and beat till just combined. 5. Pour into deep 2L container and freeze overnight or until firm.
Makes 2L
This is lovely and light but when I make it again am going to add an extra mango, and am going to try it with other fruits added also. It's making my mouth water thinking about it! (just kidding but it is scrummy) Linda :) | |

| Kyles, just entered the brie frittatas into Calorie King and they come up as...
Each - 50 calories...7gms fat...2.4gms protein...2.6gms carbs.

| Hi Kyles, Love your muffin recipe...I will definitely give that one a go. I have been making mini frittatas once a week and using them as morning or afternoon tea snacks.
MINI BRIE AND DILL FRITTATAS makes 24 6 eggs 1/4 cup thickened cream 2 tsp wholegrain mustard 1 tbsp finely chopped dill 1/4 cup self raising flour 100gm brie salt and pepper to taste
Spray non stick mini muffin pans. Mix eggs, cream, mustard, dill and flour in bowl. Season with salt and pepper. Whisk to combine. Transfer mix to jug and pour into muffin holes. Cut brie into 48 pieces. Place two pieces in each hole. Bake in oven 180C or 160C fan forced for 12-15 mins until puffed and golden.
Really yummy and can be used as a breakfast alternative too. Cheers, Kris | |

| I am really into making some quick high protein (hopefully) snacks to grab and go...so if anyone has any muffins to add please please do :)
I just tried these and may tweak a little...possibly more flour but they were pretty tasty
1 cup Self Raising Flour 2 eggs 100g Tasty Cheese 100g Parmesan Cheese 3 rashers of bacon chopped Salt/Pepper 15g Dukkah (not necessary but wanted to try it) 1 cup Milk 1 x Tin Sweet Corn
Mix it all together and spoon into patty cases or muffin tins and place into preheated over (180 deg) for 15-20 mins or until golden brown
This made 24 and I put it all into Calorie King and per serve the nurtional info is
142 calories...10.2g of fat...6.5g of protein...5.9g carbs
Now for me that makes a nice lunch that fits in with my daily intakes
PS: I think zucchini and capsicum and maybe even some mustard would be uber nice too added in | |
