Hi, I found this recipe from my days on Bodytrim. I thought I'd share because it's absolutely delicious and perfect for soft food stage and beyond.
I put the ingredients into the recipe section on myfitnesspal and for 6 serves it has: 281 calories, 19g protein, it does have 22g of fat but most of that is from the bacon, which you can always leave out.
Baked Ricotta Loaf - Recipe serves 6 (or 12 by sleeve standards)
400g Ricotta
2 Eggs
1/2 cup grated cheese
2tb parmesan cheese
1/2 cup schallots
1/2 cup diced red capsicum
100g chopped bacon
2tsp oregano
Mix all ingredients in bowl. Place mixture into a silicon loaf tin. Pack down gently. Sprinkle extra parmesan over top. Place into hot oven until top nicely browned, about 35-40 mins. Remove when cooked and cool in tin.
